Tugna is a Mandayan word for cooked rice and magtugna is a manner of cooking rice. This involved the use of a metal or stone-made stove with wood as a source of fire. In a typical and traditional Mandayan household, this is usually mounted on a pebble-soil-made countertop. Vertically cut matured bamboo shoots are lined as walling. A specific type of firewood like that of molave or tugas is preferred due to its high fire-producing capacity. They also believe that rice cooked with firewood taste and textured better than those cooked using LPG or kerosene as source of fire.
This is just one part of the beautiful Mandayan tradition and is seemingly simple yet very nurturing. Each family member is expected to somehow master the art of cooking rice the way their family heads used to be with their great grandparents. Thus, for Mandayans this is an essential basic skill their children must learn. They are truly preparing and honing them for a sustainable living and indeed providing a ‘survival kit’ for each member.
